Matteo Maenza
“At Gramen there’s a close connection between food and everything around here.”
Matteo Maenza was born in Trani, Apulia, in 1984 and his deep passion for cooking led him to travel and work alongside some of the most world-renowned chefs such as Alain Ducasse, Anne-Dophie Pic and Jean-Francois Piège. Since 2013 he has been the Lefay Resorts & Residences Executive Chef and has been a passionate supporter of the principles of Lefay Vital Gourmet sustainable cuisine, using his innate creativity to enhance it further. At the MICHELIN Guide Ceremony Italy 2025, he was awarded his first Michelin Star with the "Grual" Restaurant of Lefay Resort & SPA Dolomiti.

Giammarco Ninivaggi
Born in Altamura in 1988, before starting his journey within Lefay Resort & SPA Lago di Garda, Giammarco Ninivaggi first worked in London and then on the lake in one of the most historic properties in the area. Since 2016, he has been part of the Resort Team having fun creating new dishes and trusting his natural instinct.
Food & Beverage Manager
Michele Aurelio
After working in Milan and France, in 2008 Michele Aurelio joined the F&B Team at the opening of Lefay Resort & SPA Lago di Garda, quickly becoming Restaurant Manager. In April 2022 thanks to Gramen an exciting new chapter of his life has been launched. In 2024, he became Food & Beverage Manager.
